Easiest potato recipe!
This is the tastiest potato recipe ever, and also so easy that anyone can make them!
This recipe is great as a dinner meal, and is still tasty for leftovers!
If you want to get extra fancy, make some broccoli and broil some blue cheese dipping sauce to complete the ensemble.
And these are great as leftovers for a few days after - simply melt some cheese on top and add some classic pesto and a pinch of herbs to make them extra tasty.
Ok, enough jibber jabber. Let’s make some POTATOES!!!! 🥔 🥔 🥔
Take two baking trays and line the bottoms with parchment paper, unless you have silicone mats already set up. Take some virgin olive oil spray or nonstick butter spray and grease the parchment. If you have silicone mats, just skip the spray.
Wash around ten potatoes, but it depends on the size of your baking trays, so just adjust this recipe to work for you. 🥰

Spray some more oil on top and add a little salt. Set the oven for 375.
Once the oven is heated, put the trays in and set a timer for 30 minutes. Then switch the trays and cook for another 15 minutes.
While they cook, whip up some broccoli!
Take a large cast iron skillet and add some of that good oil spray. Take a bag of frozen broccoli and cook it in the skillet. Watch the video below!
Start the heat at medium. After five minutes, turn it to low for the duration of the cooking process. Every once in a while, give the broccoli a little stir with the wooden spatula.You know what’s great with potatoes and broccoli? Blue cheese! Honest. Make a little ramekin of blue cheese to dip on the side!
Just take a mini skillet, or an oven-safe ramekin, and fill it half full with blue cheese. Broil for five minutes or until bubbly and brown.
